Dinosaur Bar-B-Que has a story as bold as its flavors. Founded in 1983 by biker John Stage in Syracuse, New York, it started as a mobile food stand serving smoky barbecue to hungry crowds at motorcycle rallies. The demand was so strong that by 1988, the first brick-and-mortar Dinosaur BBQ opened, quickly gaining a cult following for its authentic pit-smoked meats and no-frills, down-to-earth atmosphere. With the passing of time, the brand expanded to cities like Rochester, Buffalo, and even Harlem, all while staying true to its roots.
What many don’t know is that the menu isn’t just about ribs, brisket, and wings—there’s also a “secret menu” featuring creative off-menu twists beloved by regulars.
