The Dinosaur BBQ Brooklyn menu carries a story that began long before the restaurant ever reached New York City. Dinosaur Bar-B-Que was founded in 1988 by bikers John Stage and Pam Jorgensen, starting as a mobile BBQ stand traveling to festivals across upstate New York.
