Bluestone American BBQ began as a passion project, founded by a group of food lovers determined to bring the smoky traditions of Southern barbecue to Melbourne. Opening its doors in the early 2010s, the restaurant quickly carved a name for itself with slow-smoked meats, bold flavors, and a warm, rustic setting that made diners feel right at home. Word of mouth and a loyal local following soon fueled its growth, turning Bluestone into a go-to spot for authentic American barbecue down under.
The menu expanded from classic ribs and brisket to inventive sides, hearty platters, and chef-inspired specials. While the popular menu keeps fans coming back, few know about the restaurant’s secret menu—hidden gems crafted for true barbecue enthusiasts. And though new favorites have emerged, Bluestone’s original signature smoked brisket still holds its place as the dish that started it all, beloved to this day.
