Big T’s Bar BQ began as a humble smokehouse founded by Tracy “Big T” Johnson in the early 1980s, right in the heart of Houston, Texas. What started as a small roadside stand quickly grew into a local legend, thanks to Big T’s slow-smoked brisket and family-style service. For many years, the restaurant expanded, opening new locations while keeping its roots firmly tied to authentic Texas barbecue traditions.
As word spread, Big T’s menu evolved beyond brisket, adding ribs, pulled pork, chicken, and hearty sides that kept regulars coming back. Alongside the well-known offerings, a little-known secret menu developed—special sandwiches, off-menu sides, and unique sauce blends that only insiders whisper about.
Yet, through all the growth and experimentation, one thing hasn’t changed: the original smoked brisket, Big T’s very first signature dish, still holds its place as the crown jewel and customer favorite.
