Caldwell County BBQ fired up its first smoker in 2014 in Garland, Texas, thanks to founder Jason Hall. Inspired by the rich barbecue traditions of Lockhart in Caldwell County, Hall set out to bring true Central Texas BBQ to North Texas—using oak wood, slow smoking, and a deep respect for the craft.
